Purple Radish Microgreen Butter

 Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened

  • 1/4 cup packed purple radish microgreens, finely chopped

  • 1 tsp lemon juice (optional, for brightness)

  • 1/4 tsp sea salt (adjust to taste)

  • Freshly ground black pepper (to taste)

Optional Add-ins:

  • 1 small clove garlic, finely grated (for a punchier version)

  • Zest of 1/2 lemon

  • A pinch of crushed red pepper flakes (for heat)

Instructions:

  1. Chop the greens finely – use a sharp knife so they don’t bruise.

  2. In a small bowl, mash the butter with a fork until creamy.

  3. Add the chopped microgreens, lemon juice, salt, and any optional ingredients. Mix until well combined.

  4. Taste and adjust salt, pepper, or lemon as needed.

  5. For presentation, spoon the butter onto parchment paper, roll into a log, and refrigerate for at least 30 minutes to firm up.
